Saving Forgotten Cheese
If you forget to wipe your cheese and change the towels, don't despair! Do what a Cheesemaker would do!

Should your yeast or mold gets serious, as in the picture to the left…

 
prepare a mixture of salt and water — about ¼ cup salt to a gallon of tepid water (sea salt or kosher salt preferred).

Mix well. Soak the pieces for a few minutes then wipe them clean.

 
You can use a clean sponge, a clean damp rag or a soft brush, but watch out for splatters from the brush!

After wiping, let them dry completely in a cool place. If too hot a day, dry in the refrigerator. Once dry, rub with a fresh layer of edible oil and place back into a clean bag or bin with some fresh dry towels.

 
Next time, try not to forget to let some air in, or to wipe any mold before it gets carried away! I forgot my cheese... but doesn’t it look lovely now?
